White cake mix - but instead of oil, add 1 c. applesauce.
Bake as directed.
Frosting:
1 can lemon pie filling
1 large can Cool-Whip (can use lite)
Mix these two together and frost. A layer of pie filling in between cake layers is especially good.
Optional: Top with slivered almonds. You could use different flavors other than lemon!
