Initial Prep Time: about 10 minutes
Ingredients:
- Chicken breasts (or favorite cut – boneless)
- Tomatoes - Fresh or canned … I like stewed, diced, chunked or any variety or combination.. whatever I have on hand!
- Italian Seasoning & salt & pepper
- Optional: Onions, mushrooms, sweet peppers, etc.
In crock pot: pour in a layer of tomatoes, then a layer of chicken (can cut up if desired), sprinkle with Italian Seasoning, salt & pepper (and chopped onions and/or mushrooms if desired), then repeat!
Turn crock pot on low if cooking all day, or on high if only cooking ½ day.
Prepare rice or noodles, whichever you prefer... (Minute Rice if you are very rushed!)
Serve Chicken mixture over rice … top with grated cheese if desired - Parmesan is best.
