Chicken Tartlets (Nanette S.)

1 can chicken
1 c. ricotta cheese
2 eggs
1/4 c. chopped green onions or kale
Optional: pepperoncini, finely diced
5 squirts mustard
1/4 c. romano & parmesan cheese (mixed) (save half of this to sprinkle on top!)
1/2 c. cheddar cheese (grated)
salt & pepper to taste

Mix all of the ingredients together.

Refrigerated pie crust - roll into balls, press into muffin tins, and fill with mixture, top with remaining cheese mixture.

Bake 375° for 20 minutes.

Too bad for those latecomers! These were scarfed up fast - yum.
